Freshly roasted light roasted coffee and ground Cardamom coffee with spices.
Hot water (one cup per serving).
Optional: Additional Cardamom for the serving pot.
Equipment:
Arabian Dallah (coffee pot) or cezve (ibrik).
Small espresso coffee cups.
Instructions:
Measure the Water:
Using the coffee cups you'll be serving in, measure the hot water and pour it into the cezve.
Add Coffee:
Add the coffee powder to the boiling water in the cezve. Do not stir immediately.
Leave it to boil for one full minute.
Mixing:
Gently stir the mixture over low heat, ensuring the heat is low to avoid rapid boiling.
Cooking:
Gradually heat the coffee. As it warms, foam will start to form.
Foam Management:
Before the coffee boils (when bubbles start forming), remove the cezve from the heat.
Final Boil:
Return the cezve to the heat, allowing it to gently boil. Ideally, repeat this process one to three times to enhance the foam.
Serving:
Slowly pour the coffee into the cups, letting the foam rise without boiling over.
Allow to Settle:
Let the coffee settle for a minute or two before serving, allowing the grounds to settle at the bottom of the cup.
